This recipe was super easy to make and didn't call for many ingredients! I got the original recipe from https://tasty.co/recipe/weekday-meal-prep-pesto-chicken-veggies. The recipe called for thighs. I personally don't like the way thighs taste, and I buy my chicken breasts in bulk at our local Sam's Club so that's what I used. Since most of my meals consist of chicken, the pesto gave it a different taste and changed it up some.
What you need:
3-4 chicken breast - cubed (I cut my breasts before I cooked them)
seasoning for breast - I used a little bit of Tony's to my liking
1 lb green beans (I buy mine frozen from Sam's - I used 1 bag & let them thaw a little)
1 small pack of cherry tomatoes - halved
olive oil (I used avocado oil)
1/2 cup basil pesto
How I made it:
large sauce pan, I heated avocado oil and seasoned chicken breasts
transfer chicken from the pan to a plate once cooked all the way through
in the same pan, add green beans and cook
put the chicken in the pan with the green beans, add tomatoes and pesto
stir until well mixed
I was able to make 4 meals with this recipe and it was freezer friendly! This made a great lunch, it filled me up, but didn't make me miserable for the rest of the day! Next time I make it-I'm going to add a little mozzarella cheese after I heat it up!!
