Basil Chicken Bowls


 

This recipe was super easy to make and didn't call for many ingredients! I got the original recipe from https://tasty.co/recipe/weekday-meal-prep-pesto-chicken-veggies. The recipe called for thighs. I personally don't like the way thighs taste, and I buy my chicken breasts in bulk at our local Sam's Club so that's what I used. Since most of my meals consist of chicken, the pesto gave it a different taste and changed it up some.


What you need:

  • 3-4 chicken breast - cubed (I cut my breasts before I cooked them)

  • seasoning for breast - I used a little bit of Tony's to my liking

  • 1 lb green beans (I buy mine frozen from Sam's - I used 1 bag & let them thaw a little)

  • 1 small pack of cherry tomatoes - halved

  • olive oil (I used avocado oil)

  • 1/2 cup basil pesto

How I made it:

  • large sauce pan, I heated avocado oil and seasoned chicken breasts

  • transfer chicken from the pan to a plate once cooked all the way through

  • in the same pan, add green beans and cook

  • put the chicken in the pan with the green beans, add tomatoes and pesto

  • stir until well mixed

I was able to make 4 meals with this recipe and it was freezer friendly! This made a great lunch, it filled me up, but didn't make me miserable for the rest of the day! Next time I make it-I'm going to add a little mozzarella cheese after I heat it up!!
