This was pretty much my life during my weight loss journey - basically because I was too scared that if I ate anything else I wouldn't continue losing weight, and chicken was so easy to make! Back then I would bake the chicken breast in the oven, but I've had to change it up a bit in the past few years. This is where seasoning and sides really played a huge factor in changing up the flavors so I didn't feel like I was eating the same thing everyday (even thought that's what I was doing!).
So, this is a quick, healthy go-to meal I always fall back on when I'm out of ideas. I also like to keep some for emergencies - if I don't have time to meal prep for some reason, it's nice to have meals I can go to when I'm in a hurry.
Basics:
I almost always have chicken - I used 2 chicken breasts for these 4 meals
a vegetable - I had some okra I needed to cook, but I usually do broccoli, brussel sprouts, green beans, etc
some complex carbs - sweet potatoes is what I usually used, I would also used black beans (check portion size)
There are so many ways to eat this and pair different foods with it. It was great for late nights when I on-the-go and needed something simple, fast, and not messy!
