DIY Lunchables


 

I made something like this a few weeks ago, but I decided to change it up. Before, I used turkey/chicken lunch meat, cheese cubes, Ritz Crisp & Thins / Parmesan crackers (Sam's), cherry tomatoes, and a boiled egg. I didn't like using the lunch meat mainly because the sodium is really high and I wanted healthier options. I also changed the cheese from cubes to string cheese.

So for these 3 lunchables I used:

  • 1 chicken breast

  • 3 boiled eggs

  • 36 cherry tomatoes

  • 3 string cheese

Therefore, each lunchable contained:

  • 1/3 chicken breast

  • 1 boiled egg

  • 12 cherry tomatoes

  • 1 string cheese

This was easy to make, and a good on-the-go meal if you're having a short lunch! I didn't heat up the chicken! I was worried this wouldn't fill me up, so I tried to eat a half a cup of almonds with it - but I was too full!

To mix it up a little I am going to put some turkey sausage sticks in the next ones I do!
