This recipe was so easy, and delicious, and BONUS: I was able to make 6 meals with 3 chicken breasts!!! That's right...THREE chicken breast made SIX meals!! If you feel like half a chicken breast (plus all the other goodies) won't fill you up you can make 3-4 meals, but I promise this will fill you up! I felt like I was at a Mexican restaurant (especially since we have to be careful in public nowadays, all you can do is dream) - pair this with a delicious margarita and you'll be seeing sombreros! LoL KIDDING! My margaritas these days consist of H2O and a few squirts of lime juice!! Either way, this is an awesome recipe and I can't wait to hear from you how you liked it! Here we go...
Ingredients:
3 chicken breasts
2 tsp lemon juice (optional)
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
1 large onion
2 tbsp olive oil
1 tsp minced garlic
2 tsp chili powder
1 tsp paprika
½ tsp cumin
black pepper
salt
Directions:
in a small bowl, combine chili powder, paprika, cumin, little black pepper and salt - set aside
cut chicken into strips - add half the seasoning mix, garlic and lemon juice
heat oil in pan on medium/high heat & add chicken - cook for about 15 min - or until fully cooked
move chicken to plate - set aside
add peppers, onion, and remaining seasoning - stir until soft or desired texture
mix chicken in with pepper, serve and enjoy
I paired this with cauliflower rice - super easy to make. I buy mine from our local Sam's Club frozen and cook it on the stove. You can also heat it in the microwave, whichever you prefer. In the original recipe, she combined hers with brussel sprouts.
