Miranda's Coconut Boom Boom Shrimp


 
 

I changed it up a little and stepped out of my comfort zone! Shrimp is one of the few seafood items I allow myself to eat, because: A) it tastes delicious, and B) it is super high in protein! I have spent a lot of time hunting for Boom Boom Shrimp recipes that didn't call for out of this world ingredients, or a lengthy prepping process, and I finally decided to make my own. I combined a few different recipes and ended up coming up with this - which, I must say, turned out better than I was expecting.


I call it “Coconut” because I used coconut flour. I love coconut flavoring and foods, and the fruit itself!! I don’t know how you refer to a coconut (fruit, nut, or seed), but I call it a fruit. I’ve used coconut flour for other recipes and it boosts the flavor! Can’t go wrong with that!


So here is how I made Miranda’s Coconut Boom Boom Shrimp:


Ingredients:

For the Shrimp:

  • 1 cup coconut flour

  • ½ cup Parmesan cheese (I probably will not use this next time)

  • 1 lb jumbo shrimp

  • 1 egg – beaten

  • salt/pepper

For the Sauce:

  • 1 tbsp mayo

  • 1 tbsp ketchup

  • ½ tbsp Sriracha sauce (more or less depending on desired spiciness)

**depending on your serving size, you may want to use less mayo and ketchup**

Directions:

For the Shrimp:

  • in a bowl, combine coconut flour, Parmesan, salt & pepper

  • dip each shrimp in beaten egg & then coat in mixture

  • place in a single layer in air fryer

  • cook in air fryer at 360° for 4-5 minutes, and then turn it up to 400° and cook for 4-5 more minutes (depending on size of shrimp, you may need to adjust the time)

  • if you cook shrimp in oven, bread shrimp and lay shrimp in a single layer in a lined sheet pan – bake on 400°F for approximately 10 minutes, then high broil till they begin to brown

For the Sauce:

  • Mix all ingredients in a bowl – drizzle over shrimp. I added my sauce when I was ready to eat the shrimp, after I reheated them

I paired the shrimp with some sweet potato fries – I made 2 meals with this – honestly, I could’ve made 3-4 and added some brussel sprouts or other veggie. I did not try to freeze the shrimp; I will update when I make it again and freeze it.


I was really impressed with the outcome of the recipe! The coconut flour really brought out the taste!
