This was a good recipe to switch the flavor up a bit! I actually got the chicken recipe from Hello Fresh and loved it, but when I was planning my meal prep and making my grocery list I did not have my paper copy they sent me so I had to look it up online – but that is not the same way. It tasted good, but it was a pain to clean the pan after. So I will tell you what I used and how I did it and then recommend alternative options for cooking the chicken. This was my first time making mashed cauliflower - I never could find a simple recipe that didn't call for a lot of ingredients but this one was so simple!!
Hot Honey Chicken:
Ingredients:
2 chicken breasts – I cut each in half, length-ways to make them flatter
2 tablespoons sour cream
½ cup Panko breadcrumbs
1 tablespoon crawfish boil (any fry seasoning will suffice)
hot honey
salt
pepper
Hot Honey:
I mixed about 2 tablespoons of honey with Sriracha sauce – slowly adding the sauce until I got my desired spiciness
Directions:
Combine breadcrumbs, fry seasoning, salt and pepper on a plate
Pat chicken dry with paper towels – season with salt and pepper
Coat chicken with sour cream and dip in breadcrumb mixture – pressing it into the chicken
Heat about ¼ inch of oil in a large pan on medium-high heat
When oil is hot and a pinch of Panko sizzles in it, add chicken and cook (the recipe says 4-5 minutes but I ended up having to cut the chicken and cook longer to ensure it was cooked all the way through) – you want the chicken to be golden-brown
Once the chicken is finished you can transfer to a plate to cool
Next time I cook this I will prepare everything the same, but roast it in the oven on 425° for 15-20 minutes. If you decide to cook it this way, there is no need to coat the bottom of the chicken with the breadcrumb mixture.
Mashed Cauliflower:

Ingredients:
1 head of cauliflower
6 tablespoons low fat sour cream
1 tablespoon melted butter
Directions:
Cut cauliflower into florets
Put cauliflower florets in pot & cover with water
Cook on medium heat until cauliflower is soft
Drain cauliflower and return to pot
Put pot over medium-low heat and begin mashing cauliflower with fork or potato masher
Continuously stir to get remaining liquid out for about 3 minutes
Add sour cream – 2 tablespoons at a time – and a little butter and continue to mash until desired texture
Serve and enjoy!
This was such an easy recipe – next time I’m going to top it with some green onions!
I made 4 servings with this recipe, and froze them! When I heated it up I sprinkled some cheddar cheese on the cauliflower!
**Update**
I made this recipe again (probably one of my favorite recipes). I wanted to post another picture because I made it a little differently. This time I cooked it in the air fryer!! It came out SO delicious!! I know my mashed cauliflower doesn't look very appetizing but believe me, looks can be deceiving!
Each of these meals include approximately: 405 calories, 46 grams of carbs, 7 grams of fat, and 43 grams of protein.
