Italian Broccoli Shrimp & Cauliflower Rice


 

This is another delicious, high protein shrimp meal! I've made the shrimp several times before but this was the first time I decided to pair it with broccoli and cauliflower rice.


Ingredients:

  • 1 lb shrimp

  • 1-2 bags frozen broccoli (I used 2)

  • ½ stick unsalted butter

  • 1 pk dry Italian dressing

  • lemon juice

  • 1 bag frozen cauliflower rice

Directions:

  • heat oven to 350°

  • melt butter in foil lined pan

  • lay shrimp in single layer on pan and sprinkle Italian dressing and lemon juice on them

  • cook for 15 min

  • steam broccoli in pot on stove top

  • cook cauliflower rice according to directions in bag (stove top or microwave)

I divided the broccoli into 4 containers and put 6-7 shrimp in each. I had to put the cauliflower in a separate container - but on the labels I put what was supposed to go with it.
