Before I get into the recipe I just want to say that I am not a big steak fan...mmmmmmm let me rephrase...I am not a fan of COOKING steak. Now, I love ordering steaks from restaurants, and friends I trust to cook it, but as far as me cooking it...it's a no-go. I’ve tried numerous recipes and cooked it different ways but I always end up overcooking it and drying it out.
So I found this simple recipe https://www.eatwell101.com/garlic-butter-steak-and-green-beans-recipe?amp=&cuid=0cadc36a8b33b42e381887c929bb8d32 and tweaked it some. I was cooking multiple recipes and by the time I got to this one I was tired and lazy so I didn’t add some ingredients, but it still tasted awesome!! I paired this recipe with some homemade sweet potato fries and it was delicious!
This is how I made the steak and green beans.
Ingredients:
2 sirloin steaks – sliced in strips
1 lb bag frozen green beans – thawed
3 tablespoons unsalted butter
2 teaspoons minced garlic
The original recipe called for Italian seasoning, lemon juice, beef stock, crushed red chili pepper, parsley, thyme leaves.
Marinade:
¼ cup low sodium soy sauce
1 tablespoon olive oil
1 tablespoon Sriracha sauce
Directions:
Combine steak strips, soy sauce, olive oil, and hot sauce in a large bowl - set aside while you prepare other food
In a large skillet, melt 2 tablespoons of butter on medium-high heat. Add garlic and lay the steak strips in one layer in the skillet - keep remaining marinade - Sear on each side until browned (original recipe says for 1 minute or so on each side - adjust timing depending on how you like your steak). Move steak to a plate and set aside.
Using the same skillet, lower heat and melt remaining butter. Add green beans and remaining marinade and cook until the green beans are at desired liking (I like mine soft - not very crispy)
Add steak back to pan and stir well. Enjoy!!
Sweet Potato Fries:
Since I started eating healthier, sweet potatoes have been a good side. I usually cook them in the oven with olive oil and a little cinnamon but I decided to try something different this time and Oh My Gosh...I was not expecting these to turn out so well. My mom has been using the pink Himalayan salt so I decided to grab a bottle and give it a try and it made a difference!! I'm not big on salt - I usually use Tony's Creole seasoning on most of my food but if you like putting salt on your food, I suggest trying the pink Himalayan salt!
Ingredients:
3 sweet potatoes
olive oil
pink Himalayan salt
Directions:
I sliced the potatoes and put them in a bowl and drizzled olive oil and Himalayan on them. I mixed them up so all the sweet potatoes had some oil and seasoning on them and threw them in the air fryer!! If I didn't have the air fryer I would've thrown them in the oven on 350 until desired crispiness.
I was able to make 5 meals with 2 steaks, a bag of frozen green beans, and 3 sweet potatoes - and it was freezer friendly!
Let me know how you like it!!
